Vegan Banana Split

Three ice cream scoops, whipped cream and a chocolate drizzle with some candied cherries. The Vegan Banana split is a simple recipe to make at home. The Vegan Banana Split is filled with everything you would want in a homemade ice cream.

  • 200 gr Strawberries

  • 200 gr Frozen Bananas

  • 50 gr Agave Syrup

  • 1/2 tsp Xanthan Gum

  • 50 gr Strawberries in small pieces
  • 200 gr Oat Milk

  • 200 gr Frozen Bananas

  • 50 gr Agave Syrup

  • 1/2 tsp Xanthan Gum

  • 1 Vanilla Pod (2 tsp Vanilla Extract)
Makes 6 to 8 Portions
The ingredients are for 3 to 4 Banana Split
  • 50 gr Dark Chocolate

  • 50 gr Cocoa Powder

  • 50 gr Oat Milk

  • 200 gr Frozen Bananas

  • 50 gr Agave syrup

  • 1/2 tsp Xanthan Gum

  • a pinch of salt

  • 25 gr Chopped Dark Chocolate

  • 200 gr Plant Based Whipping Cream

  • 1 Banana (for each Banana Split you are making)

  • Vegan Chocolate Syrup or Strawberry Coulis

The ingredients are for 6 to 8 portions

We were really sceptical thinking to make an ice cream with banana, then we had and idea… which occasion is best to use banana to make an ice cream if not a Banana Split! This recipe is the perfect synthesis of how it turns out.

Three flavours of creamy and delicious ice cream, on a banana, topped with whipping cream, strawberry coulis or chocolate syrup.

In this recipe we share all we discovered about vegan banana ice cream and how to make it right. As we said there is no better time to try one of this tasty flavour if not making a irresistible banana split.

Enjoy with us one of the most famous ice cream dessert, revisited vegan, made from scratch in each of its elements. 

We will start explaining the easy recipe and procedure to make each ice cream flavour, how to whip the plant-based cream,  to finish on the plating and garnishing of the dessert.

 

Vegan Banana Split

Basic preparations

The first thing is to prepare and freeze the basic ingredient the will use in the ice cream preparation.

Start by cutting the strawberries in 2 or 4 pieces, approximately the same size.

Place the strawberries pieces on parchment paper, try to leave some space between them so they won’t stick together once you place them in the freezer.

Freezer for 6 hours, or until completely frozen. If you prefer you can use frozen strawberries and simply skip this step.

Prepare the bananas now, you will need to peel them and cut them in slices of approximately the same thickness. 

Separate 200 gr of bananas for each ice cream preparation. You need a total of 200 x 3 = 600 gr to make the three ice creams.

Spread the banana slices evenly on cling film to freeze each 200 gr for 6 hours, or until completely frozen.

Using ice cube trays pour 200 gr of oat milk and freeze it until it forms ice cubes, you will then use this frozen milk in the vanilla ice cream.

 

You have now every element ready to proceed  with in the ice cream making.

Strawberry Ice Cream

Use a food processor to start the strawberry ice cream preparation, is possible making the ice cream using a blender, but you will need to be really carfull to don’t overmix and melt the cream.

Take 200 gr of frozen strawberries, 200 gr of frozen bananas, and start blending. Blend the fruit by pulsing few times, until you have small pieces of frozen fruit.

Scrape the sides of the the food processor bowl as needed and keep blending by pulsing.

In this way you will control better the result and stop once you have a smooth homogeneous frozen consistency.

Add at this point 1/2 tsp of Xanthan Gum, 50 gr of Agave Syrup and blend until creamy. Don’t overwork the mixture or it will melt. If this happen the best way you have to fix it is divide the mixture into ice cube trays and freeze them completely before adding everything again to the food processor and blend into a creamy frozen texture. 

Stop blending the strawberry mixture once you have a creamy and frozen consistency.

Add the 50 gr of strawberry pieces and stir to combine them to the ice cream. If you want at this point you could add some strawberry coulis or strawberry syrup to the ice cream. 

You can use the ice cream at this point of keep it in the freezer until serving storing it in an airtight container.

If you store the strawberry ice cream in the freezer for a long time you will need to remove it from the freezer 30 minutes before serving.

The Vegan Strawberry Ice Cream can be stored frozen for up to a month in the freezer or for longer is you are using a blast freezer.

 

Vanilla Ice Cream

Preparing the Vanilla ice cream we will follow the same method we used in the strawberry ice cream preparation.

Use a food processor and add all the ingredients; 200 gr of frozen oat milk, 200 gr of frozen bananas, 1/2 tsp of Xanthan gum, 50 gr of Agave Syrup,  Vanilla (the seeds of 1 pod, or 2 tsp of vanilla extract) . Add the ingredients all at once this time.

Blend by pulsing as for the previous ice cream preparation. This time the mixture will get creamy and smooth sooner as you added unfrozen ingredients from the beginning.

Blend by pulsing until you reach the desired  ice cream consistency, scraping the sides as needed.

Once you are happy with the consistency pour the Vegan Vanilla Ice Cream in an airtight container and store in the freezer. If don’t want to eat the vanilla ice cream plain, you can add anything you like to this vanilla ice cream base. We have tried adding some Vegan Chocolate biscuits and turning this flavour into  biscuit ice cream and it was terrific! Just use your taste and imagination and have fun enjoying creating your personal flavours.

You can store the Vanilla Ice cream frozen for up to a month or using a blast freezer for longer. 

As the said for the strawberry ice cream, if you are not serving the vanilla ice cream right away and has been stored in the freezer take it out 30 minutes before serving it.

 

Chocolate Ice Cream

Developing this Chocolate ice cream recipe was a real discover, that definitely changed our view of “banana” based ice cream. It is so chocolaty, creamy and smooth!

Using a double boiler (or the microwave) melt 50 gr of your favourite dark chocolate (we used 80% in our recipe) with 50 gr of oat milk.

Stir the two together until smooth.  The chocolate should be melted but not runny, it needs to stick to your spatula or spoon while mixing it. If it is too hot wait until it cool a bit.

Add 50 gr of Agave syrup and stir to combine.

Let the chocolate syrup you have just prepared cool completely.

At this point the recipe to prepare the Vegan Chocolate Ice Cream follows the same basic preparation of the other two ice cream recipe. 

Add to a food processor 200 gr of frozen bananas, add 50 gr of cocoa powder (unsweetened), add 1/2 tsp xanthan gum, a pinch of salt and the cooled chocolate syrup.

Blend by pulsing the mixture, scraping the sides of the food processor as needed.

Once the chocolate ice cream looks creamy and smooth stop blending and add 25 gr of chocolate chips, or chocolate in small pieces and stir to combine. 

You can now add any other essence or flavour to your chocolate ice cream, some of our favourite combinations are; candied orange peel,  chili peppers and white and dark chocolate chips,  vegan biscuits in pieces. As always your own creativity and taste is the limit to what you can achieve starting with this base.

Pour the Vegan Chocolate Ice Cream into an airtight container and freeze for at least 2 hours before serving.

 You can store the Vegan Chocolate Ice Cream frozen for up to a month or using a blast freezer for longer. 

Remember to take the Chocolate Ice Cream out of the freezer 30 minutes before serving it.

 

Whipping Cream Preparation

Skip this section if you are using a ready made vegan whipping or anything similar as in this section we go through the steps and suggestion to whip a plant based whipping cream.

You can use the plant based whipping cream you prefer to garnish your banana split, we opted for one ready sweetened and with vanilla essence, but a plain one will work perfectly as well if you are not looking for some extra sweetness and you want to just add some richness to the ice cream.

To whip the plant based whipping cream always work with cold equipment. Place your stand mixer bowl and whisk attachment in the fridge or freezer for a while before starting your preparation.

Another important factor in whipping cream to perfection is to make sure to leave the plant based cream in the fridge for a minimum of 6 hours at a temperature between 3°C to 7°C / 37°F to 45°F before starting.

With all of this in mind  put your stand mixer bowl or mixing bowl  and the attachment in the freezer for 10/15 minutes.

Take your stand mixer bowl and whisk attachment out of the freezer and fit it to the mixer.

Pour the cold plant based whipping cream in the stand mixer bowl.

Whip the plant based cream at maximum speed using the cold stand mixer bowl and whisk attachment.

Whip the cream to stiff peaks. If you see that the whipping cream is not whipping properly put the bowl in the freezer for another 10-15 minutes and try whipping again at maximum speed.

Depending if you are using a stand mixer or an electric beater the time required to whip the cream may vary slightly. 

Using a stand mixer we use to whip the cream in just 1 minute.

Once the cream is properly whipped leave aside in the fridge. Depending on the different brands you are using always read and follow their instructions on how to store and for how long to keep the whipping cream once it is whipped.

Improve your Baking & Pastry Skills

It is finally time to make and taste your Vegan Banana Split.

Start by peeling one banana and cutting it in two lengthwise.

Plate the two half on your chosen serving dish.

Add one scoop of each Vegan Ice cream; chocolate, vanilla and strawberry.

Garnish with some whipped cream on top.

Add a drizzle of chocolate syrup or strawberry coulis.

Add some candied cherries and serve it.

The Vegan Bana Split can be store frozen once made, but it will need to be left outside of the freezer at least 30 minutes before serving it.
